A Balik Jazz Fillet is a cut of expensive salmon, invented for the Montreaux Jazz Festival. A shop on Picadilly sells it and I was impressed by their advertising and the beautiful, pink marbled salmon. (I couldn't afford any of course). It looks like something you'd want to eat slowly. This instrumental had a jazzy feel, so that became the title.
